For the Cauliflower Wings

  • 28 bite-sized cauliflower florets (about 1 1/2 inches, 16 ounces)
  • 3 large eggs, beaten

  • ¼ cup sriracha
  • 2 tablespoons honey
  • 1 tablespoon butter, melted
  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar
  • ½ teaspoon garlic powder

Instructions

  1. Combine sauce base: In a small bowl, mix together sriracha, honey, melted butter, soy sauce, rice vinegar, and garlic powder to create the honey sriracha sauce. Set aside.
  2. Prepare cauliflower: Place the beaten eggs in one bowl and the flour in another. Dip each cauliflower floret into the egg mixture, then coat thoroughly with flour, shaking off any excess. Arrange them on a work surface and spray both sides lightly with olive oil spray to help achieve crispiness during air frying.
  3. Air fry cauliflower: Preheat the air fryer to 380°F (193°C). In batches, air fry the coated cauliflower florets for 7 to 8 minutes, turning halfway through cooking until the florets are golden brown and tender. Repeat with remaining cauliflower. Once all batches are done, return all florets to the air fryer and heat for an additional 1 minute to keep them warm.
  4. Coat cauliflower: Immediately transfer the hot cauliflower wings to a large bowl. Pour the prepared honey sriracha sauce over them and toss gently to coat each piece evenly.
  5. Serve: Garnish with fresh cilantro and pickled red onions if desired. Serve with optional ranch and chimichurri dips for added flavor.
