- 90 g (1/2 cup) oat flour (plus extra for dusting)
Instructions
- Mix Ingredients: Add all mashed vegetables, chopped rosemary, egg, Greek yogurt, garlic granules, oat flour, and olive oil into a large mixing bowl. Stir well until the mixture is fully combined and uniform in texture.
- Prepare for Cooking: Sprinkle some extra oat flour on a plate to prevent sticking. Using a tablespoon, scoop portions of the mixture onto the floured plate, shaping them into small bites.
- Cook in Air Fryer: Preheat the air fryer to 180ºC (356ºF). Place the sweet potato and carrot bites inside the air fryer basket in a single layer and cook for 12 minutes until golden brown and cooked through.
- Alternative Baking Option: If you prefer, place the bites on a baking tray lined with parchment paper and bake in a preheated oven at 180ºC (356ºF) for 20-25 minutes until golden and fully cooked.
- Serve: Serve the bites warm, accompanied by a sauce of your choice, and garnish with a sprinkle of fresh parsley for added flavor and presentation.
