Description

These Airfryer Sweet Potato and Carrot Bites are a nutritious and delicious finger food perfect for babies and toddlers. Combining naturally sweet vegetables with wholesome ingredients, they offer a soft, tasty snack that is easy to prepare using an air fryer or oven.

Ingredients

Scale

Vegetables and Herbs

  • 180 g (3/4 cup) mashed sweet potato
  • 180 g (3/4 cup) mashed carrot
  • 1 tsp finely chopped rosemary

Wet Ingredients

  • 1 egg
  • 3 tbsp Greek yogurt
  • 3 tbsp olive oil

Dry Ingredients

  • 1 tsp garlic granules
  • 90 g (1/2 cup) oat flour (plus extra for dusting)

Instructions

  1. Mix Ingredients: Add all mashed vegetables, chopped rosemary, egg, Greek yogurt, garlic granules, oat flour, and olive oil into a large mixing bowl. Stir well until the mixture is fully combined and uniform in texture.
  2. Prepare for Cooking: Sprinkle some extra oat flour on a plate to prevent sticking. Using a tablespoon, scoop portions of the mixture onto the floured plate, shaping them into small bites.
  3. Cook in Air Fryer: Preheat the air fryer to 180ºC (356ºF). Place the sweet potato and carrot bites inside the air fryer basket in a single layer and cook for 12 minutes until golden brown and cooked through.
  4. Alternative Baking Option: If you prefer, place the bites on a baking tray lined with parchment paper and bake in a preheated oven at 180ºC (356ºF) for 20-25 minutes until golden and fully cooked.
  5. Serve: Serve the bites warm, accompanied by a sauce of your choice, and garnish with a sprinkle of fresh parsley for added flavor and presentation.

Notes

  • Oat flour can be substituted with gluten-free flour if required.
  • Adjust cooking time slightly if you make larger or smaller bites to ensure they are cooked through.
  • These bites can be stored in the refrigerator for up to 3 days or frozen for longer storage.
  • Suitable as finger food for babies who are ready for soft solids; always check for individual allergies.
  • For vegan version, substitute egg with flax egg and Greek yogurt with a plant-based alternative.
