Scale
Pasta and Vegetables
- 8 ounces pasta (your choice, such as rotini or spaghetti)
- 1 cup bell peppers (any color, diced)
- 1 cup snap peas (trimmed and halved)
- 1 cup shredded carrots
- 1 cup green onions (sliced)
- 1 cup cucumber (diced)
- 1/4 cup cilantro (chopped)
Dressing
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons sesame oil
- 1 tablespoon honey or maple syrup
- 1 tablespoon fresh ginger (minced)
- 1 clove garlic (minced)
Garnishes
- 1/3 cup sliced almonds (optional)
- 1/4 cup sesame seeds (for garnish)
Instructions
- Cook the Pasta: Begin by cooking the pasta according to the package instructions until it reaches al dente texture. Once cooked, drain the pasta and rinse it under cold water to stop the cooking process and cool it down for the salad.
- Prepare the Vegetables: While the pasta cools, chop the bell peppers, slice the snap peas in half, shred the carrots, dice the cucumber, slice the green onions, and chop the cilantro. Set all the prepared vegetables aside.
- Make the Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, minced ginger, and minced garlic until the ingredients are well combined and the dressing is smooth.
- Combine Salad Ingredients: In a large bowl, add the cooled pasta along with the diced bell peppers, snap peas, shredded carrots, sliced green onions, diced cucumber, and chopped cilantro.
- Add Dressing and Toss: Pour the prepared dressing over the pasta and vegetable mixture. Toss everything thoroughly to ensure the salad is evenly coated with the flavorful dressing.
- Garnish: If desired, sprinkle the sliced almonds and sesame seeds over the salad to add extra crunch and a decorative touch.
- Chill and Serve: Place the salad in the refrigerator and allow it to sit for about 30 minutes. This resting time helps the flavors to meld beautifully. Serve chilled for best taste and texture.
Notes
- The salad can be customized by using your preferred pasta shape.
- For a vegan version, choose maple syrup instead of honey in the dressing.
- Adjust the amount of garlic and ginger to suit your taste preference.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Adding the almonds and sesame seeds just before serving helps maintain their crunch.
