Description

Beef Filling

  • 1 pound ground beef

  • 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
  • 1/2 cup water

  • 1 1/2 cups shredded cheddar cheese
  • 6 large flour tortillas
  • 1/2 cup salsa
  • 1/4 cup sour cream
  • 1/4 cup chopped fresh cilantro (optional)


Instructions

  1. Prepare the beef filling: Heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3 to 4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds. Add the ground beef, cooking and breaking it apart with a spoon until browned. Drain excess grease if needed. Sprinkle the taco seasoning over the beef and pour in the water, stirring well to combine. Simmer for about 5 minutes until the mixture thickens.
  2. Warm refried beans: Heat the refried beans in a small saucepan over low heat or in the microwave until warmed through.
  3. Assemble the burritos: Lay the flour tortillas flat on a clean surface. Spread a layer of warm refried beans down the center of each tortilla. Spoon the seasoned beef mixture over the beans, then sprinkle generously with shredded cheddar cheese. Add a spoonful of salsa and a small dollop of sour cream if desired. Optionally sprinkle chopped cilantro on top.
  4. Roll the burritos: Fold in the sides of each tortilla and roll tightly into burritos, ensuring that the filling is enclosed.
  5. Optional skillet crisping: To serve immediately with a crispy exterior, place the burritos seam side down in a skillet over medium heat. Cook for 2 to 3 minutes per side until lightly golden and crisp. Serve hot.
