Instructions
- Rinse rice: Begin by rinsing the rice under cold water in a fine mesh strainer until the water runs clear to remove excess starch. Set aside.
- Heat oil and cook sausage: In a large skillet or sauté pan, heat olive oil over medium heat. Add the sliced sausage and cook for 5-7 minutes, stirring occasionally, until browned and heated through.
- Sauté vegetables: Add chopped onion and bell pepper to the skillet with the sausage. Cook for 3-4 minutes until the vegetables soften.
- Add spices and garlic: Stir in minced garlic, paprika, cumin, and chili powder. Cook for 1-2 minutes until fragrant.
- Add rice: Add the rinsed rice to the skillet and stir to combine with the sausage and vegetables.
- Add broth and simmer: Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes, or until rice is tender and broth is absorbed.
- Add black beans: Remove skillet from heat, gently stir in black beans, cover, and let sit for 5 minutes to warm through.
