Description

This Breakfast Pizza combines a crispy pizza crust with fluffy eggs, savory sausage or bacon, fresh vegetables, and a melty blend of cheeses. Perfect for a hearty and flavorful morning meal, it features a quick bake and a delicious combination of textures and tastes.

Ingredients

Scale

Crust

  • 1 can prepared pizza crust
  • 2 tablespoons olive oil (divided)
  • ½ teaspoon dried basil

Egg Mixture

  • 6 eggs
  • 3 tablespoons milk
  • Salt and black pepper (to taste)

Toppings

  • 8 ounces ground pork sausage (cooked and drained) or ¼ cup cooked and crumbled bacon
  • 3 green onions (sliced, divided)
  • ¼ cup finely diced red bell pepper
  • 8 ounces Cabot Pepper Jack Cheese (shredded)
  • 2 ounces Cabot Extra Sharp Cheddar Cheese (shredded)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat the oven: Set your oven to 425°F (220°C) to get it ready for baking the pizza crust and toppings.
  2. Prepare the crust: Grease a 10×15-inch rimmed baking sheet with 1 tablespoon of olive oil. Press the prepared pizza dough evenly onto the pan, then brush the surface with the remaining 1 tablespoon of olive oil. Sprinkle the dried basil over the dough. Bake it in the preheated oven for 7-8 minutes until the crust is lightly browned.
  3. Cook the eggs: While the crust bakes, whisk together the eggs, milk, salt, and black pepper. Heat a lightly oiled skillet over medium heat, and cook the egg mixture just until set, about 3-4 minutes. The eggs should remain glossy and slightly undercooked since they will finish cooking in the oven.
  4. Add toppings: Spread the cooked eggs evenly over the partially baked crust. Top with cooked sausage or bacon, half of the sliced green onions, and diced red bell pepper. Sprinkle the shredded Pepper Jack and Extra Sharp Cheddar cheeses evenly over the toppings.
  5. Bake the pizza: Return the pizza to the oven and bake for another 8-10 minutes, or until the cheese is melted. For a browned cheese topping, broil the pizza for 1-2 minutes, watching closely to prevent burning.
  6. Finish and serve: Remove the pizza from the oven and sprinkle the remaining green onions and optional chopped fresh parsley on top. Let the pizza rest for 2-3 minutes before slicing and serving to allow flavors to settle.

Notes

  • You can substitute bacon for sausage according to your preference or dietary needs.
  • Ensure the eggs are slightly undercooked before placing them on the pizza so they finish cooking perfectly in the oven.
  • Broiling is optional but adds a nice golden color and crispiness to the cheese topping.
  • Use a rimmed baking sheet to keep the pizza toppings from spilling over during baking.
  • Fresh parsley adds a pop of color and fresh flavor but can be omitted if unavailable.
