Instructions

  1. Prepare the Chicken Mixture: In a medium bowl, thoroughly mix the shredded chicken with buffalo sauce and ranch or blue cheese dressing, if using, until all the chicken is well coated and flavorful.
  2. Assemble Quesadillas: Lay out two tortillas on a flat surface. Evenly sprinkle half of the shredded cheese onto one side of each tortilla. Spoon the buffalo chicken mixture over the cheese layer, then top with the remaining cheese. Place the second tortilla on top of each to form two quesadillas.
  3. Cook the Quesadillas: Heat butter or oil in a large skillet over medium heat. Carefully place one assembled quesadilla in the skillet and cook for 2 to 3 minutes per side, until the tortillas are golden brown and crisp, and the cheese inside is melted.
  4. Repeat Cooking: Remove the cooked quesadilla from the skillet and set aside. Repeat the cooking process with the second quesadilla in the same skillet.
