Instructions

  1. Mix the filling: In a large bowl, combine the finely chopped Romaine lettuce, grated Parmesan cheese, crushed croutons, Caesar dressing, mashed potatoes, egg, and optional garlic or anchovy. Mix thoroughly until all ingredients are well incorporated, forming a cohesive filling mixture.
  2. Form croquettes: Using your hands, shape the mixture into small balls or short cylinders, approximately 1 to 1.5 inches in size, ensuring they are compact to hold their shape during frying.
  3. Coat: Roll each croquette evenly in the breadcrumbs to create a crispy outer crust which will help seal in the filling while frying.
  4. Chill: Place the coated croquettes on a tray and refrigerate for 20 to 30 minutes. This step is optional but highly recommended to help the croquettes firm up and hold their shape during frying.
