- 1/4 cup fresh basil leaves, chopped

- 1/2 cup mozzarella cheese, shredded or sliced
- 1/2 cup cherry tomatoes
- 1 tablespoon balsamic vinegar
Instructions
- Prepare the egg mixture: In a medium bowl, whisk together the eggs, milk (or heavy cream/coconut milk), chopped fresh basil, salt, and black pepper until the mixture is smooth and well combined.
- Start cooking the frittata: Heat the olive oil in a medium oven-safe skillet over medium heat. Pour in the egg mixture and cook undisturbed for about 2 minutes until the edges start to set but the center remains runny.
- Add the cheese and broil: Sprinkle the mozzarella cheese evenly over the partially cooked eggs. Transfer the skillet to the oven’s broiler and broil for 2-3 minutes, or until the cheese is melted and the eggs are fully set and slightly golden on top. Watch closely to avoid burning.
- Add tomatoes and serve: Remove the frittata from the oven. Arrange blistered cherry tomatoes on top or around the frittata, drizzle with balsamic vinegar, and serve immediately while warm.
Notes
- You can use any type of milk or cream according to your preference; coconut milk adds a nice subtle flavor and is dairy-free.
- For a dairy-free version, substitute mozzarella with a vegan cheese alternative or omit it entirely.
- If you don’t have a broiler, cover the skillet with a lid and cook on low until eggs are fully set, but the broiler gives best results for a nicely browned top.
- Fresh basil really makes a difference; frozen basil is not recommended for this recipe.
- The recipe can easily be doubled or tripled for more servings using a larger skillet or baking dish.
