Pie and filling
- 1 pie crust (store-bought or homemade)
- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 4 large eggs
- 1 cup heavy cream
- 1 cup fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 1/2 cup shredded mozzarella cheese (optional)
Instructions
- Preheat Oven. Preheat your oven to 375°F (190°C) to prepare for baking the quiche.
- Prepare Pie Crust. Fit the store-bought or homemade pie crust into a 9-inch pie dish and prick the bottom with a fork to prevent bubbling.
- Pre-bake Crust. Bake the crust in the preheated oven for 10 minutes to set it. Remove and set aside.
- Caramelize Onions. Heat olive oil in a large skillet over medium heat. Add the thinly sliced onions, sugar, and salt. Cook, stirring occasionally, for 20-25 minutes until onions are golden brown and caramelized.
- Cool Onions. Remove the skillet from the heat and allow the caramelized onions to cool slightly.
- Mix Filling. In a mixing bowl, whisk together eggs, heavy cream, black pepper, and nutmeg until smooth and combined.
- Add Spinach and Feta. Stir chopped spinach and crumbled feta cheese into the egg mixture.
- Combine Onions with Filling. Fold the cooled caramelized onions into the egg and cheese mixture thoroughly.
- Fill Pie Crust. Pour the prepared filling into the pre-baked pie crust evenly.
