  • 1 pie crust (store-bought or homemade)
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 4 large eggs
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/2 cup shredded mozzarella cheese (optional)


Instructions

  1. Preheat Oven. Preheat your oven to 375°F (190°C) to prepare for baking the quiche.
  2. Prepare Pie Crust. Fit the store-bought or homemade pie crust into a 9-inch pie dish and prick the bottom with a fork to prevent bubbling.
  3. Pre-bake Crust. Bake the crust in the preheated oven for 10 minutes to set it. Remove and set aside.
  4. Caramelize Onions. Heat olive oil in a large skillet over medium heat. Add the thinly sliced onions, sugar, and salt. Cook, stirring occasionally, for 20-25 minutes until onions are golden brown and caramelized.
  5. Cool Onions. Remove the skillet from the heat and allow the caramelized onions to cool slightly.
  6. Mix Filling. In a mixing bowl, whisk together eggs, heavy cream, black pepper, and nutmeg until smooth and combined.
  7. Add Spinach and Feta. Stir chopped spinach and crumbled feta cheese into the egg mixture.
  8. Combine Onions with Filling. Fold the cooled caramelized onions into the egg and cheese mixture thoroughly.
  9. Fill Pie Crust. Pour the prepared filling into the pre-baked pie crust evenly.
  10. Add Mozzarella (Optional). Sprinkle shredded mozzarella cheese over the top for added flavor and a golden crust if desired.
