Instructions
- Season Chicken: Trim fat off chicken thighs. Place chicken in a bowl and add 4 teaspoons olive oil and balsamic vinegar. Toss with tongs to coat thoroughly. Sprinkle chili powder, paprika, cumin, garlic powder, dried oregano, onion powder, salt, and pepper evenly over the chicken. Toss again until each piece is well coated with the spice mixture.
- Cook Chicken: Arrange the chicken thighs smooth side down in a single, even layer in the air fryer basket. Air fry at 400°F for 10–12 minutes until the internal temperature reaches 160°F. Remove chicken to a cutting board and let it rest for 5 minutes to retain juices. Optionally, squeeze fresh lime juice over the sliced chicken for added brightness.
- Cook Peppers and Onions: Heat a large nonstick 12-inch pan over medium-high heat. Add 2 tablespoons olive oil and let it warm. Add the sliced bell peppers and onions in an even layer. Season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Stir occasionally to allow the vegetables to soften and develop a char in spots, cooking for about 10–12 minutes until tender.
- Assemble Bowls: Divide cilantro-lime rice evenly among four bowls. Top each bowl with sliced chicken and the sautéed pepper and onion mixture. Add any desired toppings such as sour cream, shredded cheese, guacamole, or salsa. Serve immediately and enjoy your fresh, flavorful Chicken Fajita Bowls.
