Instructions

  1. Prepare the chicken: Preheat your oven to 375°F (190°C). Slice the chicken breasts horizontally to create a pocket without cutting all the way through. If needed, gently pound the chicken to even thickness. Season both sides with salt, pepper, garlic powder, and Italian seasoning.
  2. Make the cream cheese filling: In a bowl, combine softened cream cheese, shredded mozzarella, grated Parmesan, and chopped basil or parsley if using. Stir well to blend all ingredients into a smooth mixture.
  3. Stuff the chicken: Carefully stuff each chicken breast with the cream cheese mixture. Use toothpicks to seal the edges or fold over tightly if breasts are thick enough.
  4. Coat the chicken: Dredge each stuffed chicken breast in all-purpose flour, then dip into beaten eggs. Coat thoroughly with Italian breadcrumbs mixed with grated Parmesan cheese. Place breaded chicken on a plate or tray ready for cooking.
