Ingredients
Scale
Dry Ingredients
- 2/3 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 cup cornstarch
- 1/4 teaspoon salt
Wet Ingredients
- 2 3/4 cups whole milk
- 1 teaspoon vanilla extract
- 2 tablespoons unsalted butter
Instructions
- Mix dry ingredients: In a medium saucepan, combine the granulated sugar, unsweetened cocoa powder, cornstarch, and salt. Whisk together thoroughly to ensure there are no lumps.
- Add milk and cook: Gradually whisk in the whole milk to the dry mixture until smooth. Place the saucepan over medium heat and cook the mixture, stirring constantly to prevent burning or lumps, until it thickens and starts to bubble, about 5 to 7 minutes.
- Simmer and thicken: Once bubbling, continue to cook and stir for an additional 1-2 minutes until the pudding is thick and creamy.
- Remove from heat and add vanilla and butter: Take the saucepan off the heat. Stir in the vanilla extract and unsalted butter until fully melted and incorporated, giving the pudding a glossy, rich finish.
- Cool and serve: Pour the pudding into individual serving dishes. Cover with plastic wrap directly on the surface to prevent skin from forming. Refrigerate for at least 2 hours until chilled and set. Serve chilled or at room temperature as desired.
Notes
- Use whole milk for the creamiest texture; you can substitute with 2% milk if desired.
- For extra richness, use Dutch-processed cocoa powder.
- To avoid lumps, add milk gradually and whisk constantly during cooking.
- The pudding can be stored in the refrigerator for up to 3 days.
- Cover pudding surface with plastic wrap directly to prevent a skin from forming.
