Instructions

  1. Blend the Mousse: In a mini food processor, combine the ripe avocado, plain Greek yogurt, fresh lime or lemon juice, and a pinch of flaky salt. Blitz until the mixture is smooth and silky in texture. Set aside while you prepare the other components.
  2. Toast the Bread: Toast the slice of hearty sourdough or multigrain bread to a medium-dark golden brown for optimal crunch and warmth. Keep the toast warm until assembly.
  3. Strain the Egg: Crack the cold large egg into a fine sieve and gently swirl for 5 seconds. This helps remove the thinner egg whites, resulting in a neater poached egg. Then, carefully slide the strained egg into a small ramekin for easy transfer.
