Description

This Instant Pot Chicken Breast recipe delivers tender, juicy chicken breasts cooked quickly with flavorful spices and chicken broth. Perfect for a healthy weeknight dinner, these chicken breasts maintain moisture and absorb aromatic seasoning for a deliciously satisfying meal. The use of the Instant Pot ensures a hassle-free cooking process in just 15 minutes of actual cook time.

Ingredients

Scale

Chicken and Seasoning

  • 2 pounds boneless, skinless chicken breasts (High-quality chicken recommended.)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Cooking Liquid and Fat

  • 1 cup chicken broth
  • 1 tablespoon olive oil

Optional

  • Fresh herbs such as rosemary or thyme (for added flavor)

Instructions

  1. Prepare the Chicken: Pat the chicken breasts dry with paper towels for better seasoning adherence. In a small bowl, mix together garlic powder, onion powder, paprika, salt, and black pepper. Rub this spice mixture evenly over both sides of the chicken breasts.
  2. Sauté the Chicken: Turn the Instant Pot to the sauté setting and heat 1 tablespoon of olive oil. Once hot, sear the chicken breasts for about 2 minutes on each side until lightly browned. This helps lock in flavors and improves texture.
  3. Add Liquid and Herbs: Pour 1 cup of chicken broth into the Instant Pot around the chicken breasts. Optionally, add fresh herbs such as rosemary or thyme on top of the chicken to infuse aromas during cooking.
  4. Pressure Cook the Chicken: Secure the Instant Pot lid and set the valve to sealing position. Select the manual or pressure cook setting and cook on high pressure for 10 minutes. This method ensures perfectly cooked and juicy chicken breasts.
  5. Release Pressure and Serve: Once the cooking time is complete, allow a natural pressure release for 5 minutes, then carefully release any remaining pressure manually. Open the lid, remove the chicken breasts, and let them rest a few minutes before slicing and serving.

Notes

  • Do not skip searing as it enhances flavor and texture.
  • Use fresh herbs for the best aroma but dried herbs can be substituted.
  • Allowing the chicken to rest after cooking helps retain juices.
  • Adjust seasoning according to your taste preferences.
  • Chicken breasts can be stored in an airtight container in the fridge for up to 3 days.
