Mushroom Sauce

  • 1 (8-oz) package sliced mushrooms
  • 3 cloves garlic, peeled and crushed
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 teaspoon cornstarch
  • Fresh chopped parsley (optional, for serving)


Instructions

  1. Season pork chops: Lightly pound the pork chops for extra tenderness. Generously season with garlic herb seasoning or a blend of salt, pepper, dried herbs, and garlic powder.
  2. Sear pork chops: Heat a large skillet over medium-high heat. Add olive oil, then sear the pork chops until golden on the outside and just cooked through, working in batches if necessary. Remove pork chops and set aside.
  3. Sauté the mushrooms: In the same skillet, add the sliced mushrooms and sauté over medium to medium-high heat until golden and tender, about 6 minutes. Stir in the crushed garlic and cook for 2-3 minutes until fragrant and lightly golden.
  4. Make the roux: Reduce heat to medium-low. Stir in butter until melted, then sprinkle flour over the mushrooms. Stir continuously until flour is fully incorporated and no dry flour remains.
  5. Start the sauce: Gradually pour in chicken broth while stirring to avoid lumps. Simmer over medium to medium-high heat until the sauce thickens slightly, about 2-3 minutes.
  6. Add cream: Reduce heat to low. Whisk together heavy cream and cornstarch until smooth, then stir into the mushroom sauce until combined and smooth.
  7. Warm through: Nestle the seared pork chops back into the sauce and gently simmer until heated through. Serve with extra sauce spooned over the pork chops and garnish with cracked black pepper and fresh chopped parsley if desired.
