Description

Crispy Chicken Waffles Delight combines crunchy oven-baked pork rind-crusted chicken tenders with fluffy, cheesy almond flour waffles for a satisfying and flavorful meal perfect for brunch or dinner.

Ingredients

Scale

Chicken Tenders

  • Cooking spray
  • 4 oz pork rinds
  • 1 cup freshly grated Parmesan
  • 1 large egg
  • 2 Tbsp mayonnaise
  • 2 Tbsp water
  • Kosher salt
  • Freshly ground black pepper
  • 1 lb boneless skinless chicken breasts, cut into strips

Waffles

  • 4 large eggs
  • 2 cups almond flour
  • 1 cup shredded cheddar
  • 1 cup milk
  • 1 cup sour cream
  • 1 tsp baking powder
  • Kosher salt
  • Freshly ground black pepper
  • Cooking spray

Garnish

  • 2 Tbsp freshly chopped chives
  • Butter (optional)

Instructions

  1. Preheat Oven and Prepare Baking Sheet: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and generously grease it with cooking spray to prevent sticking.
  2. Prepare Pork Rind Coating: Place the pork rinds into a food processor and pulse until they break down into fine crumbs. Transfer these crumbs to a shallow dish and mix in the freshly grated Parmesan cheese for added flavor and texture.
  3. Make Egg Wash for Chicken: In a medium bowl, whisk together one large egg, mayonnaise, and water. Season the mixture with kosher salt and freshly ground black pepper to taste.
  4. Coat the Chicken: Dip each chicken strip into the egg mixture, allowing any excess to drip off. Then coat the chicken thoroughly in the pork rind and Parmesan mixture, pressing gently to adhere the crumbs. Place coated chicken strips on the prepared baking sheet.
  5. Bake the Chicken: Bake the chicken tenders in the preheated oven until they turn a beautiful golden color and are cooked through, about 25 to 30 minutes.
  6. Prepare Waffle Batter: While the chicken bakes, preheat your waffle iron. In a large bowl, whisk the four large eggs, then add almond flour, shredded cheddar cheese, milk, sour cream, and baking powder. Combine thoroughly and season with kosher salt and freshly ground black pepper.
  7. Cook the Waffles: Grease the waffle iron with cooking spray. Following your waffle iron’s instructions, add about 1/2 cup of batter and cook until golden brown, approximately 4 to 5 minutes. Repeat this process with the remaining batter.
  8. Serve: Plate the crispy chicken tenders alongside the warm waffles. Garnish with freshly chopped chives and butter if desired, and enjoy this delightful combination.

Notes

  • Using pork rinds as the coating provides a gluten-free, crunchy alternative to traditional breading.
  • Ensure the chicken strips are uniform in size for even cooking.
  • If almond flour is unavailable, a nut-free substitute may be used but will alter the texture.
  • Waffle batter includes cheese and sour cream for richness; feel free to adjust seasoning to taste.
  • Butter garnish is optional but adds extra flavor and moisture to the dish.
