Description

Dolly Parton’s Macaroni Salad is a classic, creamy side dish featuring perfectly cooked elbow macaroni tossed in a tangy, flavorful dressing with crunchy vegetables and sweet pickle relish. This easy-to-make salad is perfect for picnics, potlucks, or as a comforting accompaniment to your favorite grilled dishes.

Ingredients

Scale

Pasta

  • 2 cups elbow macaroni (uncooked)

Dressing

  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Vegetables and Relish

  • 1/2 cup chopped celery
  • 1/2 cup chopped green bell pepper
  • 1/4 cup finely chopped red onion
  • 1/3 cup sweet pickle relish (or chopped sweet pickles)

Instructions

  1. Cook the macaroni: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente according to package instructions. Drain and rinse under cold water to cool completely, which helps to stop the cooking process and keeps the pasta firm.
  2. Chop the vegetables: While the pasta cools, finely chop the celery, green bell pepper, red onion, and sweet pickles or relish to prepare for mixing into the salad.
  3. Make the dressing: In a large mixing bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, sugar, salt, and black pepper until the mixture is smooth and well combined, creating a creamy and tangy dressing base.
  4. Combine ingredients: Add the cooled macaroni to the bowl with the dressing and gently fold to coat all the pasta evenly. Then mix in all the chopped vegetables and relish thoroughly to distribute flavors evenly throughout the salad.
  5. Chill and serve: Taste and adjust the seasoning if needed. Cover the salad and chill in the refrigerator for at least 1 hour or preferably overnight to allow the flavors to meld. Stir again just before serving to recombine the ingredients.

Notes

  • For best results, chill the macaroni salad for several hours or overnight to enhance flavors.
  • You can substitute sweet pickle relish with chopped sweet pickles for texture variation.
  • Adjust the seasoning with extra salt or pepper according to your taste preference.
  • This salad can be made a day ahead to save time and improve flavor.
  • For a lighter option, use low-fat mayonnaise or Greek yogurt instead of regular mayonnaise.
