Description

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning

Vegetables

  • 3 to 4 Romaine lettuce hearts, rinsed and chopped
  • 1 cup black beans, rinsed
  • 1 large tomato, chopped or 1 cup sliced cherry tomatoes

Dairy and Cheese

  • 1/2 cup shredded cheddar cheese

Extras

  • 1 ½ cups nacho cheese Doritos, broken into bite-size pieces
  • 1 cup Catalina dressing or your favorite salad dressing (ranch dressing works well too)
  • Fresh cilantro (optional, for garnish)


Instructions

  1. Brown the Ground Beef: In a large skillet over medium-high heat, brown and crumble the ground beef. Once cooked through, drain the grease.
  2. Season the Beef: Add the taco seasoning and the amount of water called for on the seasoning packet. Stir the mixture until it comes to a boil. Then reduce the heat to low and let it simmer gently for 10 minutes. Remove from heat and let the meat cool slightly.
  3. Prepare the Salad Base: In a large salad bowl, combine the chopped Romaine lettuce, rinsed black beans, chopped tomato, and shredded cheddar cheese. Add the slightly cooled seasoned ground beef and gently toss everything together to combine.
  4. Chill (Optional): You can serve the salad immediately or cover and chill it in the refrigerator until ready to eat. Avoid adding the Doritos chips until just before serving to keep them crunchy.
  5. Add Chips and Dressing: When ready to serve, add the bite-sized Doritos chips and pour the Catalina or preferred dressing over the salad. Toss the salad gently to coat everything evenly. Garnish with fresh cilantro if desired, and serve immediately.

  • For best crunch, add Doritos chips only right before serving.
