- 1 pound lean ground beef
- 1 packet (1 ounce) taco seasoning
- 3 to 4 Romaine lettuce hearts, rinsed and chopped
- 1 cup black beans, rinsed
- 1 large tomato, chopped OR 1 cup sliced cherry tomatoes
- 1/2 cup shredded cheddar cheese
- 1 ½ cups nacho cheese Doritos, broken into bite-size pieces
- 1 cup Catalina dressing (or your favorite salad dressing)
- Fresh cilantro (optional)
Instructions
- Cook the Ground Beef: Brown and crumble the ground beef in a large skillet over medium-high heat. Once cooked, drain the grease thoroughly. Add the taco seasoning along with the amount of water specified on the seasoning packet. Stir the mixture and bring it to a boil, then reduce the heat to low and let it simmer for 10 minutes. Remove from heat and allow the meat to cool slightly.
- Prepare the Salad Base: In a large salad bowl, combine the chopped romaine lettuce, rinsed black beans, chopped or sliced tomatoes, and shredded cheddar cheese. Add the slightly cooled ground beef to the bowl and gently toss all the ingredients together until well mixed. You can serve immediately or chill in the refrigerator until ready to serve. Avoid adding Doritos chips at this stage to keep them crunchy.
- Serve with Doritos and Dressing: Just before serving, add the broken nacho cheese Doritos chips and your preferred dressing (Catalina or ranch is recommended) to the salad. Toss gently to coat everything evenly. Optionally, garnish with fresh cilantro to add a burst of herbal freshness. Serve immediately for the best texture and flavor.
