Description

These Easy Baked Chicken Tacos combine shredded chicken seasoned with taco spices and salsa, then baked in tortillas with melted cheese for a crispy, flavorful meal. Perfect for a quick weeknight dinner, they can be customized with your favorite toppings like sour cream, guacamole, and fresh veggies.

Ingredients

Scale

Filling

  • 2 cups cooked, shredded chicken (rotisserie works great)
  • 1 packet taco seasoning (or 2 tbsp homemade)
  • ½ cup salsa

Tacos

  • 8–10 small flour or corn tortillas
  • 1 cup shredded Mexican blend or cheddar cheese
  • 1 tbsp olive oil (for brushing)

Optional Toppings

  • Sour cream
  • Guacamole
  • Shredded lettuce
  • Diced tomatoes
  • Jalapeños
  • Fresh cilantro

Instructions

  1. Preheat Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Prepare the Filling: In a mixing bowl, combine 2 cups of cooked, shredded chicken with 1 packet of taco seasoning and ½ cup of salsa. Stir until everything is well incorporated.
  3. Warm Tortillas: To avoid cracking during folding and baking, microwave the tortillas for 20–30 seconds wrapped in a damp paper towel.
  4. Assemble Tacos: Spoon the chicken mixture onto one half of each tortilla, then sprinkle 1 cup shredded cheese over the filling. Fold the tortilla over to enclose the filling, and place each taco on the prepared baking sheet.
  5. Brush with Olive Oil: Lightly brush both sides of the folded tacos with 1 tablespoon of olive oil. This helps them crisp up beautifully and adds flavor.
  6. Bake: Place the baking sheet in the oven and bake for 12–15 minutes, or until the tortillas turn golden brown and crispy and the cheese is melted inside.
  7. Serve: Remove from the oven and serve hot with your choice of optional toppings such as sour cream, guacamole, shredded lettuce, diced tomatoes, jalapeños, and fresh cilantro.

Notes

  • For a creamier filling, add a spoonful of cream cheese to the chicken mixture before assembling.
  • Boost texture and flavor by mixing in black beans or corn with the chicken filling.
  • Using shredded rotisserie chicken saves time and adds great flavor.
  • Warm tortillas gently to prevent cracking and ensure easy folding.
  • Brush with olive oil on both sides for optimal crispiness when baking.
