These Easy Baked Chicken Tacos combine shredded chicken seasoned with taco spices and salsa, then baked in tortillas with melted cheese for a crispy, flavorful meal. - 8–10 small flour or corn tortillas
- 1 cup shredded Mexican blend or cheddar cheese
- 1 tbsp olive oil (for brushing)

Instructions
- Preheat Oven: Set your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking.
- Prepare the Filling: In a mixing bowl, combine 2 cups of cooked, shredded chicken with 1 packet of taco seasoning and ½ cup of salsa. Stir until everything is well incorporated.
- Warm Tortillas: To avoid cracking during folding and baking, microwave the tortillas for 20–30 seconds wrapped in a damp paper towel.
- Assemble Tacos: Spoon the chicken mixture onto one half of each tortilla, then sprinkle 1 cup shredded cheese over the filling. Fold the tortilla over to enclose the filling, and place each taco on the prepared baking sheet.
- Brush with Olive Oil: Lightly brush both sides of the folded tacos with 1 tablespoon of olive oil. This helps them crisp up beautifully and adds flavor.
- Bake: Place the baking sheet in the oven and bake for 12–15 minutes, or until the tortillas turn golden brown and crispy and the cheese is melted inside.
- Serve: Remove from the oven and serve hot with your choice of optional toppings such as sour cream, guacamole, shredded lettuce, diced tomatoes, jalapeños, and fresh cilantro.
