Ingredients
Scale
Meat
- 2 pounds hot beef breakfast sausage
Vegetables & Frozen
- 1 (30-32 ounce) bag frozen tater tots
Spices & Seasonings
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Cheese
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
Dairy & Eggs
- 8 large eggs
- 2 cups milk
Instructions
- Brown the Sausage: In a large skillet over medium-high heat, brown the hot beef breakfast sausage while breaking it up into small pieces as it cooks. Once browned and cooked through, drain off any excess grease and set the sausage aside.
- Prepare Baking Dish: Grease a 9×13 inch baking dish thoroughly. Spread the frozen tater tots evenly in a single layer on the bottom of the dish to create the first layer of the casserole.
- Layer Sausage and Cheese: Evenly distribute the browned beef sausage over the layer of tater tots. Sprinkle the shredded cheddar cheese evenly over the sausage, followed by a layer of shredded mozzarella cheese.
- Mix Egg Mixture: In a large mixing bowl, whisk together the 8 large eggs, 2 cups milk, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/4 teaspoon garlic powder, and 1/4 teaspoon onion powder until thoroughly combined.
- Pour Egg Mixture: Gently pour the egg mixture evenly over the layered tater tots, sausage, and cheese in the baking dish, ensuring it covers the ingredients evenly.
- Bake the Casserole: Place the baking dish in a preheated oven at 375°F (190°C) and bake for 45 to 55 minutes, or until the eggs are fully set and the tater tots are golden brown and crispy on top.
- Rest and Serve: Remove the casserole from the oven and allow it to rest for 5 to 10 minutes before slicing and serving. This helps the casserole to set further and makes serving easier.
Notes
- You can substitute turkey sausage for a leaner option.

- Use full-fat or 2% milk depending on your preference.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven or microwave.
