Ingredients
Scale
Marinade and Chicken
- 16 ounces Chicken
- 2 cloves Garlic
- 1 tablespoon Red Wine Vinegar
- 2 tablespoons Lemon juice
- 2 tablespoons Extra virgin olive oil
- 3 tablespoons Greek yogurt
- 2 teaspoons Dried oregano
- ¾ teaspoon Salt
- ½ teaspoon Black pepper
Vegetables and Bowl Ingredients
- 2 ounces Red onion (diced)
- 20 ounces Cucumber (diced)
- 8 ounces Tomato (diced)
- 40 Kalamata Olives
- 8 ounces Feta Cheese
- 1 cup Tzatziki Sauce
Instructions
- Prepare the Marinade: In a large bowl, combine all of the marinade ingredients including garlic, red wine vinegar, lemon juice, olive oil, Greek yogurt, dried oregano, salt, and black pepper. Whisk thoroughly to create a smooth marinade.
- Marinate the Chicken: Place the chicken into a gallon freezer bag and pour the marinade over the chicken. Seal the bag securely and refrigerate for 4 hours to allow the flavors to infuse the meat.
- Cook the Chicken: When ready to cook, remove the chicken from the marinade and wipe off any excess. Cook the chicken until it reaches an internal temperature of 165°F. You may grill the chicken, bake it in a preheated oven at 400°F for about 20 minutes, or cook it in a skillet over medium-high heat for 15-20 minutes.
- Slice the Chicken: Once cooked through, let the chicken rest briefly, then slice it thinly for serving.
- Assemble the Bowls: Divide the sliced chicken, diced red onion, cucumber, tomato, Kalamata olives, feta cheese, and tzatziki sauce evenly between 4 bowls.
- Serve and Enjoy: Finish each bowl with a squeeze of fresh lemon juice and toss the ingredients together before eating to blend the flavors perfectly.
Notes
- Marinating the chicken for at least 4 hours enhances the flavor and tenderness.
- Chicken can be cooked using your preferred method: grilling, baking, or skillet cooking.
- Use full-fat Greek yogurt for a richer marinade and creamier texture.
- Tzatziki sauce can be homemade or store-bought for convenience.
- Serve with warm pita bread or over rice for a more filling meal.
