Description

This Easy Chicken Gyro Bowl is a fresh and flavorful meal featuring marinated grilled chicken served with colorful Mediterranean vegetables, Kalamata olives, feta cheese, and creamy tzatziki sauce. Perfect for a quick weeknight dinner or a healthy lunch, this recipe combines simple ingredients with vibrant tastes for a satisfying and balanced dish.

Ingredients

Scale

Marinade and Chicken

  • 16 ounces Chicken
  • 2 cloves Garlic
  • 1 tablespoon Red Wine Vinegar
  • 2 tablespoons Lemon juice
  • 2 tablespoons Extra virgin olive oil
  • 3 tablespoons Greek yogurt
  • 2 teaspoons Dried oregano
  • ¾ teaspoon Salt
  • ½ teaspoon Black pepper

Vegetables and Bowl Ingredients

  • 2 ounces Red onion (diced)
  • 20 ounces Cucumber (diced)
  • 8 ounces Tomato (diced)
  • 40 Kalamata Olives
  • 8 ounces Feta Cheese
  • 1 cup Tzatziki Sauce

Instructions

  1. Prepare the Marinade: In a large bowl, combine all of the marinade ingredients including garlic, red wine vinegar, lemon juice, olive oil, Greek yogurt, dried oregano, salt, and black pepper. Whisk thoroughly to create a smooth marinade.
  2. Marinate the Chicken: Place the chicken into a gallon freezer bag and pour the marinade over the chicken. Seal the bag securely and refrigerate for 4 hours to allow the flavors to infuse the meat.
  3. Cook the Chicken: When ready to cook, remove the chicken from the marinade and wipe off any excess. Cook the chicken until it reaches an internal temperature of 165°F. You may grill the chicken, bake it in a preheated oven at 400°F for about 20 minutes, or cook it in a skillet over medium-high heat for 15-20 minutes.
  4. Slice the Chicken: Once cooked through, let the chicken rest briefly, then slice it thinly for serving.
  5. Assemble the Bowls: Divide the sliced chicken, diced red onion, cucumber, tomato, Kalamata olives, feta cheese, and tzatziki sauce evenly between 4 bowls.
  6. Serve and Enjoy: Finish each bowl with a squeeze of fresh lemon juice and toss the ingredients together before eating to blend the flavors perfectly.

Notes

  • Marinating the chicken for at least 4 hours enhances the flavor and tenderness.
  • Chicken can be cooked using your preferred method: grilling, baking, or skillet cooking.
  • Use full-fat Greek yogurt for a richer marinade and creamier texture.
  • Tzatziki sauce can be homemade or store-bought for convenience.
  • Serve with warm pita bread or over rice for a more filling meal.
