Instructions

  1. Prepare the Sausage and Onion: In a large skillet over medium heat, cook the pork sausage until it is browned and fully cooked, breaking it apart as it cooks. Add the diced onion and sauté until the onion becomes translucent and soft, about 3-5 minutes. Drain any excess fat from the skillet.
  2. Preheat Oven and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
  3. Combine Ingredients: In a large mixing bowl, whisk together the eggs, milk, onion powder, garlic powder, salt, and black pepper. Add the thawed hash brown potatoes, cooked sausage and onion mixture, and 8 ounces of the shredded cheddar cheese. Mix everything thoroughly until well combined.
  4. Assemble the Casserole: Pour the mixture into the prepared baking dish and spread evenly. Sprinkle the remaining 4 ounces of shredded cheddar cheese evenly over the top.
  5. Bake the Casserole: Place the dish in the preheated oven and bake for 50-60 minutes, or until the casserole is set in the middle and the top is golden brown and bubbly. To check doneness, insert a knife into the center; it should come out clean.
