Description

A quick and flavorful Easy Pepper Steak recipe featuring tender flank steak stir-fried with colorful bell peppers in a savory garlic-ginger soy sauce. Ready in just 25 minutes, this dish makes a perfect weeknight meal for two.

Ingredients

Scale

Vegetables

  • 1 medium red bell pepper, thinly sliced
  • 1 medium green bell pepper, thinly sliced

Meat

  • 1 1/4 pounds flank steak, thinly sliced

Sauce

  • 1 tablespoon minced garlic
  • 2 teaspoons minced ginger
  • 1/4 cup soy sauce
  • 1/4 cup chicken broth or water
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon black pepper, or more to taste

Other

  • 2 tablespoons vegetable oil, divided

Instructions

  1. Prepare the Sauce: In a small bowl, combine soy sauce, chicken broth (or water), brown sugar, cornstarch, and black pepper. Stir well to dissolve the cornstarch and set aside.
  2. Cook the Peppers: Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Add the sliced red and green bell peppers, cooking for 2-3 minutes until they soften slightly but still retain some crunch. Remove from the pan and set aside on a plate.
  3. Sear the Steak: Add the remaining 1 tablespoon of oil to the pan. Add the thinly sliced flank steak and cook for 2-3 minutes until the outside is nicely browned but the inside remains pink for tenderness.
  4. Add Aromatics: Stir in the minced garlic and ginger to the steak, cooking for about 30 seconds until fragrant and aromatic.
  5. Combine and Thicken: Return the cooked bell peppers to the pan. Give the prepared sauce a quick stir, then pour it into the pan. Stir continuously as the sauce begins to thicken and coat the steak and peppers evenly.
  6. Serve: Once the sauce has thickened sufficiently, transfer the pepper steak to a serving dish. Serve hot and enjoy your meal!

Notes

  • For best results, slice the flank steak thinly against the grain for maximum tenderness.
  • You can substitute chicken broth with water to lighten the dish.
  • Adjust black pepper to your taste for spiciness.
  • This dish pairs well with steamed rice or noodles.
  • Ensure the pan is hot before adding the steak for a good sear without overcooking.
