Description

These Greek Beef Wraps with Cucumber Yogurt Sauce are a delicious and quick 30-minute meal perfect for busy weeknights. Ground beef is seasoned with traditional Greek spices and sautéed to perfection, then wrapped in soft flatbreads with a refreshing cucumber yogurt sauce, fresh veggies, and tangy feta cheese for a flavorful and satisfying dinner.

Ingredients

Scale

For the Beef:

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and black pepper, to taste

For the Cucumber Yogurt Sauce:

  • 1 cup plain Greek yogurt
  • 1/2 cup cucumber, finely grated and squeezed dry
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • Salt, to taste

For Assembly:

  • 4 large flatbreads or wraps
  • Sliced tomatoes
  • Shredded lettuce
  • Sliced red onion
  • Crumbled feta cheese

Instructions

  1. Sauté Onion: Heat olive oil in a skillet over medium heat and sauté the chopped onion until soft, about 3–4 minutes.
  2. Add Garlic: Add minced garlic to the skillet and cook for 1 minute until fragrant.
  3. Cook Beef and Season: Add ground beef along with dried oregano, cumin, paprika, salt, and black pepper. Break up the meat as it cooks to ensure even browning.
  4. Brown Beef: Continue cooking until the beef is browned and fully cooked, then remove from heat.
  5. Make Sauce: In a bowl, combine Greek yogurt, grated cucumber, lemon juice, olive oil, minced garlic, and salt; mix until smooth.
  6. Chill Sauce: Place the cucumber yogurt sauce in the refrigerator until ready to use, allowing the flavors to meld.
  7. Warm Flatbreads: Warm the flatbreads or wraps according to package instructions to make them pliable for rolling.
  8. Assemble Wraps: Lay the warmed flatbread flat, add a portion of the cooked beef to the center, top with cucumber yogurt sauce and your choice of sliced tomatoes, shredded lettuce, sliced red onion, and crumbled feta cheese.
  9. Serve: Roll up the wraps tightly and serve immediately while warm and fresh.

Notes

  • To squeeze dry the cucumber, use a clean kitchen towel or cheesecloth to remove excess moisture, preventing a watery sauce.
  • You can substitute ground lamb for beef for a more authentic Greek flavor.
  • For a spicier kick, add a pinch of red pepper flakes to the beef while cooking.
  • These wraps can also be served with a side of lemon wedges and extra feta for garnish.
  • Flatbreads can be lightly toasted in a dry skillet for extra texture before assembling.
