Ingredients
Scale
Chicken and Seasoning
- 1 tablespoon olive oil
- 2 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and black pepper, to taste
Sauce
- 3 cloves garlic, minced
- ¼ cup honey
- 2 tablespoons low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon onion powder
- ½ teaspoon red pepper flakes
- 1 tablespoon cornstarch
- 2 tablespoons water
Garnish and Serving
- Fresh parsley, chopped (for garnish)
- Cooked rice, for serving
Instructions
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Season the bite-sized chicken pieces with salt and black pepper. Add the chicken to the skillet and cook until golden brown and completely cooked through. Remove the chicken from the skillet and set aside.
- Make Sauce: In a bowl, whisk together the honey, low-sodium soy sauce, rice vinegar, onion powder, and red pepper flakes until well combined.
- Cook Garlic and Thicken Sauce: Reduce the skillet heat to medium and add the minced garlic. Cook until fragrant, about 30 seconds to a minute. Pour the honey mixture into the skillet and bring it to a gentle simmer. In a small bowl, mix the cornstarch and water to create a slurry, then slowly pour it into the skillet while stirring. Continue stirring until the sauce thickens to a glaze consistency.
- Glaze Chicken: Return the cooked chicken to the skillet and toss it with the thickened sauce until all pieces are well coated. Cook for an additional 2-3 minutes until the chicken is heated through and glossy.
- Serve: Garnish the honey garlic chicken bites with freshly chopped parsley and serve hot over cooked rice for a complete meal.
Notes
- Use low-sodium soy sauce to control salt levels in the dish.
- Adjust the amount of red pepper flakes to control spiciness according to your preference.
- For a gluten-free option, substitute soy sauce with tamari or coconut aminos.
- Cook chicken pieces evenly sized for consistent cooking.
- Serve with steamed vegetables or a side salad for a balanced meal.
