Ingredients
Scale
Sweet Potato Mixture
- 3 pounds sweet potatoes (peeled and cut into 1 inch cubes)
- ½ cup hot honey
- ½ cup butter
- ¼ teaspoon cinnamon
- ¼ teaspoon salt
Topping
- ¼ cup hot honey
- ¼ cup butter
- ¼ teaspoon cinnamon
- 3 cups corn flakes
- ½ cup pecans
Instructions
- Preheat Oven: Preheat the oven to 375°F (190°C). Grease a 9 inch x 13 inch baking dish and set it aside for later use.
- Cook Sweet Potatoes: Bring a large pot of water to a boil on the stovetop. Add the peeled, cubed sweet potatoes to the boiling water and simmer for 15 minutes, or until they are fork-tender. Drain the sweet potatoes using a colander.
- Mash Sweet Potatoes: In a large bowl or back in the cooking pot, combine the cooked sweet potatoes, ½ cup hot honey, ½ cup butter, ¼ teaspoon cinnamon, and ¼ teaspoon salt. Use an electric hand mixer or potato masher to mash the ingredients together until smooth and well combined.
- Assemble Base Layer: Spread the mashed sweet potato mixture evenly into the prepared baking dish.
- Prepare Topping Mixture: Melt the remaining ¼ cup butter in a medium bowl. Stir in the remaining ¼ cup hot honey and ¼ teaspoon cinnamon until well mixed.
- Make Crunchy Topping: Crush the corn flakes and pecans together using a food processor or by placing them in a large plastic zipper bag and crushing with a rolling pin. Mix the crushed mixture into the melted butter and hot honey mixture until fully coated.
- Add Topping to Casserole: Sprinkle the crunchy corn flakes and pecan topping evenly over the mashed sweet potato layer in the baking dish.
- Bake Casserole: Place the casserole in the preheated oven and bake for 20 minutes, or until the topping is golden and crispy.
- Serve: Remove from the oven and optionally drizzle with extra hot honey before serving for an additional spicy-sweet kick.
Notes
- Use good quality hot honey or make your own by mixing honey with chili flakes for the perfect spicy-sweet flavor.
- For a nut-free topping, omit pecans or substitute with seeds such as pumpkin seeds.
- The casserole can be assembled ahead of time and refrigerated, then baked before serving.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated in the oven to maintain crispiness.
