Description

This Irresistible Feta and Spinach Casserole is a healthy, flavorful vegetarian favorite perfect for a wholesome main course. Packed with fresh spinach and a blend of creamy cheeses, it’s baked to golden perfection and offers a delightful Mediterranean taste that’s both satisfying and nutritious.

Ingredients

Scale

Vegetables

  • 10 ounces fresh spinach, chopped
  • 1 small onion, finely diced
  • 3 cloves garlic, minced

Cheeses

  • 1 cup crumbled feta cheese
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/3 cup grated Parmesan cheese

Other

  • 1 tablespoon olive oil
  • 3 large eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup breadcrumbs

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F. Lightly grease a medium-sized baking dish to prevent sticking.
  2. Sauté Aromatics and Spinach: Heat olive oil in a skillet over medium heat. Add diced onion and cook for 3 to 4 minutes until softened. Stir in minced garlic and cook for 30 seconds until fragrant. Add chopped spinach and cook for 2 to 3 minutes until wilted and most moisture evaporates. Remove from heat and let it cool slightly.
  3. Mix Cheese and Eggs: In a large bowl, whisk together the eggs and milk until well combined. Add feta, ricotta, mozzarella, Parmesan, salt, black pepper, oregano, and red pepper flakes (if using). Mix thoroughly to blend all ingredients.
  4. Combine Spinach Mixture: Stir the cooled spinach and onion mixture into the cheese and egg mixture until evenly incorporated.
  5. Assemble and Bake: Pour the combined mixture into the prepared baking dish and spread it out evenly. Sprinkle breadcrumbs evenly over the top to create a crunchy crust. Bake in the preheated oven for 30 to 35 minutes until the casserole is set in the center and the top is lightly golden.
  6. Cool and Serve: Remove from oven and allow the casserole to cool for a few minutes before slicing and serving. This resting time helps it set perfectly for neat slices.

Notes

  • For added flavor, consider incorporating chopped sun-dried tomatoes or sautéed mushrooms into the spinach mixture.
  • To make this casserole gluten free, substitute regular breadcrumbs with gluten free breadcrumbs or omit them entirely.
