Description

Keto Cajun Shrimp & Sausage Stuffed Cabbage is a flavorful low-carb meal featuring tender cabbage bowls filled with a spicy mixture of smoked sausage, seasoned shrimp, and sautéed vegetables. Baked to perfection with a cheesy finish, this dish combines Cajun spices and hearty ingredients to satisfy your cravings while keeping it keto-friendly.

Ingredients

Scale

Cabbage Bowls

  • 2 medium green cabbages
  • 2 tbsp olive oil or butter
  • Salt and pepper, to taste

Filling

  • 12 oz smoked sausage (turkey, chicken, or beef)
  • ½ lb shrimp, peeled and deveined
  • ½ cup chopped onion
  • ½ cup diced red and green bell peppers
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or bacon-fat alternative
  • 1 tsp Cajun seasoning
  • ½ tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper (optional)
  • Salt and pepper, to taste
  • ½ cup shredded mozzarella or cheddar cheese (optional)

Instructions

  1. Prepare the Cabbage Bowls: Preheat the oven to 375°F (190°C). Slice the tops off both cabbages and carefully hollow out the centers to create space for stuffing. Rub the inside of each cabbage with olive oil or butter, then season with salt and pepper. Place the prepared cabbages into a baking dish.
  2. Cook the Filling: Heat 2 tablespoons of olive oil or bacon-fat substitute in a skillet over medium heat. Add the chopped onion, diced red and green bell peppers, and minced garlic, sautéing until softened and fragrant, about 3-5 minutes. Add the smoked sausage sliced into pieces and cook until browned, approximately 4-5 minutes. Stir in the peeled and deveined shrimp along with the Cajun seasoning, paprika, garlic powder, cayenne pepper (if using), salt, and pepper. Cook for 2-3 minutes until the shrimp turns pink and is cooked through.
  3. Stuff the Cabbage: Evenly spoon the shrimp and sausage mixture into each hollowed-out cabbage. If desired, sprinkle shredded mozzarella or cheddar cheese inside the cabbage bowls for a creamy, melty topping.
  4. Bake: Cover the baking dish loosely with aluminum foil and place in the preheated oven. Bake for 40-50 minutes, until the cabbage softens and the filling is heated through. Remove the foil and bake for an additional 10 minutes to let the tops brown and develop a roasted finish.
  5. Serve: Remove the stuffed cabbage bowls from the oven and garnish with chopped parsley or green onions if desired. Slice each cabbage bowl into wedges and serve hot for a satisfying keto-friendly meal.

Notes

  • For a dairy-free option, omit the cheese or use a plant-based alternative.
  • Adjust the cayenne pepper to control the spice level.
  • Make sure to hollow out the cabbage carefully to avoid breaking the outer leaves.
  • You can substitute smoked sausage with your preferred type of sausage for different flavors.
  • Leftovers can be stored covered in the refrigerator for up to 3 days.
