Description

These Loaded Breakfast Sweet Potato Boats are a wholesome and hearty morning meal that combines roasted sweet potatoes filled with eggs, crispy turkey bacon, cheddar cheese, and fresh avocado. Perfectly seasoned and baked, this gluten-free recipe delivers a balanced and flavorful start to your day.

Ingredients

Scale

Sweet Potatoes and Eggs

  • 4 medium sweet potatoes
  • 4 large eggs

Fillings and Toppings

  • 4 slices of cooked turkey bacon or sausage
  • 1 cup shredded cheddar cheese
  • 2 green onions, chopped
  • 1 avocado, diced
  • Salt and pepper to taste
  • Optional: sour cream for serving

Instructions

  1. Preheat and Bake Potatoes: Preheat your oven to 400°F (200°C). Place the sweet potatoes on a baking sheet lined with parchment paper and bake for 30-35 minutes, or until they are tender when pierced with a fork.
  2. Prepare Turkey Bacon or Sausage: While the potatoes bake, cook the turkey bacon or sausage until crisp. Allow to cool slightly, then chop into bite-sized pieces for filling.
  3. Hollow Out Sweet Potatoes: Remove the baked sweet potatoes from the oven and carefully slice each one in half lengthwise. Use a spoon to scoop out a small portion of the flesh from each half to create a boat shape, leaving enough to hold the fillings.
  4. Add Eggs: Crack one large egg into each sweet potato half, taking care to keep the yolk intact for optimal texture and appearance.
  5. Season and Add Fillings: Season each egg-filled sweet potato boat with salt and pepper. Evenly sprinkle the chopped turkey bacon or sausage on top, then cover with shredded cheddar cheese.
  6. Bake Again: Return the stuffed sweet potatoes to the oven and bake for an additional 10-12 minutes, or until the eggs are cooked to your desired doneness and the cheese is melted.
  7. Garnish and Serve: Remove from the oven and garnish each sweet potato boat with chopped green onions and diced avocado. Serve immediately with a dollop of sour cream if desired.

Notes

  • For a vegetarian version, omit the turkey bacon or sausage and consider adding sautéed mushrooms or spinach.
  • Ensure eggs are baked to your preferred level of doneness — less time for runny yolks, more time for fully set eggs.
  • You can prepare the sweet potatoes in advance and assemble before the final bake for a quicker breakfast.
  • Sour cream is optional but adds a nice creamy contrast to the loaded flavors.
