Instructions
- Prepare Chia Pudding Base: In a bowl or jar, whisk together chia seeds, coconut milk, maple syrup, and vanilla extract thoroughly to prevent clumping. This mix will absorb liquid and thicken into pudding.
- Refrigerate and Thicken: Cover the mixture and refrigerate for at least 4 hours or overnight. Stir once after the first 30 minutes to ensure the chia seeds are evenly distributed for the best texture.
- Prepare Fruit Purée: Once the pudding has thickened, purée the mango and dragon fruit separately using a blender for a smooth texture, or mash them with a fork for chunkier layers. Optionally, add a splash of lime juice to enhance the fruit flavors.
- Assemble the Pudding: In serving glasses or jars, layer the chia pudding and the puréed mango and dragon fruit alternately to create vibrant, colorful layers or swirls.
