Description

A vibrant and healthy Mango & Dragon Fruit Chia Pudding that is colorful, plant-based, and naturally sweetened. This easy-to-make, no-cook recipe combines chia seeds soaked in creamy coconut milk with fresh tropical fruits for a delicious breakfast, snack, or dessert option suitable for vegan and gluten-free diets.

Ingredients

Scale

Chia Pudding Base

  • 1/2 cup chia seeds
  • 2 cups unsweetened coconut milk (or any plant-based milk)
  • 1–2 tablespoons maple syrup or agave (to taste)
  • 1 teaspoon vanilla extract

Fruit Layers

  • 1 cup fresh or frozen mango, cubed
  • 1 cup fresh or frozen dragon fruit (pitaya), cubed or puréed
  • 1 teaspoon lime juice (optional)

Toppings (optional)

  • Coconut flakes
  • Fresh mint
  • Extra fruit for topping

Instructions

  1. Prepare Chia Pudding Base: In a bowl or jar, whisk together chia seeds, coconut milk, maple syrup, and vanilla extract thoroughly to prevent clumping. This mix will absorb liquid and thicken into pudding.
  2. Refrigerate and Thicken: Cover the mixture and refrigerate for at least 4 hours or overnight. Stir once after the first 30 minutes to ensure the chia seeds are evenly distributed for the best texture.
  3. Prepare Fruit Purée: Once the pudding has thickened, purée the mango and dragon fruit separately using a blender for a smooth texture, or mash them with a fork for chunkier layers. Optionally, add a splash of lime juice to enhance the fruit flavors.
  4. Assemble the Pudding: In serving glasses or jars, layer the chia pudding and the puréed mango and dragon fruit alternately to create vibrant, colorful layers or swirls.
  5. Add Toppings and Serve: Top each serving with coconut flakes, fresh mint leaves, or additional fresh fruit as desired. Serve chilled for a refreshing tropical treat.

Notes

  • You can use either white or black chia seeds; both work equally well.
  • For a quicker version, refrigerate the pudding for just 2 hours, though longer chilling improves texture.
  • This dish can be prepped in advance, making it perfect for breakfast or a healthy snack on-the-go.
  • Feel free to substitute fruits based on seasonal availability or preference.
