Description

  • ¼ cup unsweetened cocoa powder (25g)
  • 2½ cups quick oats (250g)

  • ½ cup milk (120ml)
  • ½ cup unsalted butter (113g)
  • ¾ cup creamy no-stir peanut butter (200g)
  • 2 teaspoons vanilla extract


Instructions

  1. Prepare Baking Sheets: Line two baking sheets with parchment paper or wax paper to prevent sticking and for easy cleanup.
  2. Cook Sugar Mixture: In a medium saucepan, whisk together the sugar, milk, butter, and cocoa powder over medium heat. Stir occasionally until the mixture reaches a full boil.
  3. Boil and Combine: Once boiling, stop stirring and allow to boil for exactly 60 seconds. Remove from heat and immediately stir in the oats, peanut butter, and vanilla extract using a silicone spatula until fully combined.
  4. Form Cookies: Using a cookie scoop or spoon, drop about 2 tablespoons of the mixture onto the prepared baking sheets in heaps.
  5. Set Cookies: Allow cookies to cool and set for 20 to 30 minutes at room temperature before serving.

Notes

  • Use quick oats for the best texture; old-fashioned oats can also work but may result in a chewier cookie.
