  • 1/2 cup tomato paste (120g)
  • 1 tsp sweetener of choice (5g)
  • 1/2 tsp onion powder
  • 1/2 tsp minced garlic
  • 2 tsp dried basil (optional)
  • 1/2 tsp salt (remaining)

Cheese (Optional)

  • 3 sticks string cheese or vegan mozzarella


Instructions

  1. Rinse Quinoa: Rinse the quinoa thoroughly in a fine mesh strainer to remove the bitter saponins that coat the grains, ensuring a cleaner taste.
  2. Cook Quinoa: Combine rinsed quinoa, water, and 1/8 teaspoon of salt in a small saucepan. Bring to a boil, then cover and reduce heat to a simmer. Cook for 15 minutes or until the water is absorbed and quinoa is fluffy.
  3. Preheat Oven: While quinoa cooks, preheat your oven to 350°F (176°C).
  4. Prepare Bean Mixture: Drain and rinse the pinto beans. In a large bowl, mash them well using a fork. Add the cooked quinoa, tomato paste, sweetener, onion powder, garlic, dried basil (if using), remaining salt, and mix until uniform.
