Ingredients
Scale
Protein and Vegetables
- 1 pound organic chicken thighs, boneless and skinless, cubed
- 2 medium sweet potatoes, peeled and cubed
- 1 cup snap peas, trimmed
- 1 cup diced bell peppers (any color)
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
Liquids and Oils
- 2 tablespoons avocado oil
- 4 cups homemade chicken stock
Spices and Garnish
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 2 tablespoons cilantro, chopped (for garnish)
Instructions
- Sauté Onions and Garlic: In a large Dutch oven, warm the avocado oil over medium heat. Add the diced onion and sauté until soft and translucent, about 6 minutes. Add minced garlic and cook for an additional minute to release its aroma.
- Brown the Chicken: Add the cubed chicken thighs to the pot, stirring frequently until golden brown on all sides, about 6-8 minutes.
- Add Vegetables: Incorporate the sweet potatoes, snap peas, and diced bell peppers, stirring well to combine all ingredients evenly.
- Add Stock and Seasonings: Pour in the homemade chicken stock, then sprinkle in dried oregano, smoked paprika, salt, and pepper. Stir to mix, then raise heat until the mixture reaches a gentle boil.
- Simmer the Stew: Reduce heat to low, cover the pot, and let the stew simmer for 25-30 minutes until the sweet potatoes are tender and chicken is fully cooked through.
- Final Seasoning and Serve: Taste and adjust seasoning if needed. Serve hot, garnished with fresh chopped cilantro for a flavorful finishing touch.
Notes
- For a thicker stew, mash some of the cooked sweet potatoes before serving.
- Use free-range or organic chicken for the best flavor and nutrition.
- Homemade chicken stock is preferred for depth of flavor but store-bought low-sodium stock can be used.
- Feel free to substitute snap peas with green beans or other crisp vegetables.
- Adjust spices to your taste; smoked paprika gives a nice smoky undertone but regular paprika works as a milder option.
