Description

This easy roasted beets recipe delivers tender, flavorful beets with minimal prep. Simply toss fresh beets with olive oil, salt, and pepper, then roast them wrapped in foil and parchment to lock in moisture. They can be served warm with butter or chilled in salads, making a versatile side dish rich in nutrients and natural sweetness.

Ingredients

Scale

Beets

  • 6 beets (or as many as desired)

Seasoning

  • 1 tablespoon olive oil (about 1 tablespoon for every 4-6 beets)
  • Salt (to taste)
  • Black pepper (to taste)

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) to prepare for roasting the beets evenly and slowly.
  2. Prepare beets: Thoroughly wash the beets under cold running water. Cut off the tops and bottoms, then slice each beet in half to increase roasting surface area. Toss the beet halves with olive oil, salt, and black pepper to ensure they are well seasoned.
  3. Wrap beets: Lay a large sheet of aluminum foil on your work surface and top it with parchment paper. Place the seasoned beets on the parchment, then fold and seal the foil pack tightly to create a steaming effect. Alternatively, you can place the beets in a greased baking dish and cover it.
  4. Roast beets: Place the foil packet on a baking sheet and roast in the preheated oven for 60 to 75 minutes. Check for doneness by inserting a fork; the beets should be tender and easily pierced.
  5. Peel beets: Once roasted, use rubber gloves or paper towels to rub the skins off the beets gently. The skins should slide off easily, revealing the tender beet inside.
  6. Serve: Serve the roasted beets warm with a pat of butter for richness or chill them to add to fresh salads, enhancing your meal with their vibrant color and earthy sweetness.

Notes

  • Make sure not to overcrowd the foil packet to allow even cooking.
  • Wear gloves when handling beets to avoid staining your hands.
  • Beets can be stored in the refrigerator for up to 5 days after roasting.
  • For a sweeter flavor, consider roasting beets with a drizzle of honey or balsamic vinegar before wrapping.
