Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the garlic head to expose the individual cloves. Drizzle with olive oil, then wrap the garlic tightly in aluminum foil. Roast in the oven for 35 to 40 minutes until the cloves are soft and golden brown. Remove from the oven and allow it to cool. Once cool enough to handle, squeeze the roasted garlic cloves out of their skins and mash them into a smooth paste.
  2. Sauté the Onion: In a medium saucepan over medium heat, melt the butter. Add the finely chopped onion and sauté for 5 to 6 minutes, stirring occasionally, until the onion becomes soft and translucent, releasing its sweetness into the pan.
  3. Combine Sauce Ingredients: Stir the mashed roasted garlic into the pan with the onion. Add the crushed tomatoes, dried oregano, salt, black pepper, and crushed red pepper flakes if using. Stir well to combine. Bring the sauce to a gentle simmer and cook uncovered for 15 to 20 minutes, stirring occasionally to prevent sticking, allowing the flavors to meld and the sauce to thicken slightly.
  4. Add Creamy Elements (Optional): For a creamy version of the sauce, stir in the heavy cream and grated Parmesan cheese during the last 5 minutes of cooking. This will enrich the sauce with a smooth texture and savory depth.
