Instructions

  1. Preheat oven: Preheat your oven to 400°F to prepare for roasting the leeks.
  2. Prepare leeks: Cut off the root ends and the dark green tops of the leeks. Slice each leek in half lengthwise. Thoroughly wash between the layers to remove any dirt or debris lodged inside.
  3. Simmer leeks: Place the leeks cut side down in an oven-safe pan along with ½ cup of water. Cover the pan and simmer on the stovetop over low heat for about 5 minutes until the leeks are slightly tender.
  4. Drain and flip: Carefully drain any remaining water from the pan. Flip the leeks so the cut side is facing up to better absorb the seasonings and melt the cheeses during baking.
  5. Season and bake: Season the leeks with salt and pepper to taste. Drizzle evenly with the melted butter and sprinkle the shredded Parmesan cheese on top. Bake in the preheated oven for 25 to 35 minutes until the leeks are tender and the tops are golden brown.
