Ingredients
Scale
Beans and Rice
- 1 cup dried black beans (soaked overnight) or 2 cups canned black beans (drained and rinsed)
- 1 cup long-grain white rice or brown rice
- 2 cups chicken or vegetable broth
Protein
- 8 ounces smoked beef sausage or andouille sausage (or turkey sausage for a leaner option), chopped into bite-sized pieces
Vegetables
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup chopped bell pepper (any color)
Spices and Seasoning
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper (adjust to taste)
- 1 tablespoon cooking oil (vegetable or olive oil)
- 1 tablespoon apple cider vinegar or lemon juice (optional, for brightness)
Instructions
- Prepare the Ingredients: If using dried black beans, soak them overnight and rinse before use. If canned beans are used, drain and rinse well. Chop the onion, garlic, bell pepper, and sausage into bite-sized pieces, preparing all ingredients for cooking.
- Sauté the Vegetables: Heat a tablespoon of oil in a large pot over medium heat. Add the chopped onion and bell pepper. Cook, stirring occasionally, until the vegetables soften, approximately 5 minutes. Then add the minced garlic and cook for an additional 1 minute until fragrant.
- Add the Sausage: Add the chopped beef or andouille sausage to the pot. Cook, stirring occasionally, until the sausage browns and releases its flavors, about 5 to 7 minutes.
- Incorporate the Spices: Sprinkle the ground cumin, paprika, and cayenne pepper over the sausage and vegetables. Stir thoroughly to evenly coat and toast the spices for about 1 minute.
- Add Beans and Broth: Mix in the prepared black beans and pour in the chicken or vegetable broth. Bring the mixture to a rolling boil, then reduce heat to a low simmer to allow flavors to meld together.
- Cook the Rice: Stir the rice into the pot, cover it tightly, and let simmer for approximately 20 minutes or according to package instructions, until the rice is tender and has absorbed nearly all the liquid.
- Fluff and Serve: Remove the pot from heat, keep it covered, and let it rest for 5 minutes. Fluff the rice gently with a fork to mix everything nicely. Optionally, stir in the apple cider vinegar or lemon juice for a fresh brightness before serving. Serve warm and enjoy!
Notes
- Using turkey sausage makes this dish leaner but just as flavorful.
- You can substitute brown rice but expect a longer cooking time (about 40-45 minutes).
- Adjust cayenne pepper to your preferred spice level or omit for mild flavor.
- Soaking dried beans overnight reduces cooking time and improves digestibility.
- Leftovers store well refrigerated for up to 3 days and reheat nicely.
