Burger Add-ins (optional but recommended)

  • Finely diced onion (raw or griddled)
  • Dill pickle chips, chopped
  • Shredded lettuce (for serving, not cooking)

Smashburger Sauce

  • ¼ cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp yellow mustard
  • 1 tsp pickle juice
  • Optional: garlic powder or smoked paprika (to taste)


Instructions

  1. Smash the beef: Heat a cast iron or heavy skillet over very high heat until hot. Form the ground beef into loose balls without compacting them. Place a beef ball in the skillet, season with salt and pepper, then smash it hard and flat using a spatula. Cook until the surface is deeply browned and crispy, flip briefly, then remove from the pan.
  2. Build the quesadilla: Reduce heat to medium. Place one flour tortilla flat in the pan. Evenly sprinkle cheese over half of the tortilla. Layer the smashed beef on top, breaking it up slightly. Add diced onions and chopped pickles if using, then sprinkle more cheese over everything to help bind the quesadilla. Fold the tortilla over to cover the filling.
  3. Crisp it up: Cook the quesadilla until the bottom side is golden and crunchy. Carefully flip it over and cook the other side similarly. Press gently with the spatula during cooking to ensure the cheese melts and all ingredients meld together.
  4. Finish: Remove the quesadilla from the pan and slice into portions. Serve with a drizzle or dip of smashburger sauce and top with shredded lettuce for added crunch and freshness.
