Description

  • 2 Tbsp coconut oil (melted)
  • 1/2 cup pecans (optional; raw and unsalted)


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare it for baking the fruit.
  2. Prepare Fruit: Core and slice the apples and pears into roughly 1/2-inch thick lengthwise pieces. Place these slices in a mixing bowl or directly in a large baking or casserole dish.
  3. Season the Fruit: Add ground cinnamon, ground ginger, and freshly squeezed lemon juice to the fruit. Melt the coconut oil in the microwave for about 30 seconds, then pour over the fruit. Mix well so each slice is evenly coated with the spices and oil.
  4. Bake the Fruit: Transfer the fruit mixture to a baking dish if it was mixed in a bowl. Bake in the preheated oven for 30-35 minutes until the fruit is tender and slightly browned.
  5. Prepare Pomegranate Seeds: While the fruit bakes, remove the seeds from the pomegranate. An effective method is to do this in a colander of water to minimize mess and speed up the process.
  6. Add Toppings and Toast Pecans: After the initial baking, remove the fruit from the oven and sprinkle with pomegranate seeds and pecans. Return to the oven for another 7-8 minutes to toast the pecans and meld the flavors.
