- 1/2 cup Milk (any kind)
- 2 Large eggs
- 1 tsp Pure vanilla extract

- 2 TBSP Unsalted butter (to melt on the griddle)
Instructions
- Mix dry ingredients: In a large bowl, sift together the all-purpose flour, baking powder, baking soda, and salt to ensure a smooth, lump-free batter.
- Mix wet ingredients: In a separate bowl, whisk together the white granulated sugar, heavy cream, milk, eggs, and pure vanilla extract until well combined.
- Combine wet and dry: Pour the wet ingredient mixture into the dry ingredients. Whisk gently until just combined; the batter should be slightly lumpy to keep the pancakes fluffy. Let the batter sit for 10 minutes to allow the leavening agents to activate and the batter to thicken.
- Preheat griddle: Heat a griddle or a large frying pan over medium heat (around 350°F). Just before cooking the pancakes, melt 1 tablespoon of unsalted butter on the griddle to prevent sticking and add flavor.
- Cook pancakes: Using a 1/2 cup measuring cup, pour batter onto the griddle to form large pancakes. Cook them for 3-4 minutes until bubbles form on the surface and the bottoms are golden brown. Flip each pancake carefully and cook for another 2-3 minutes on the other side until golden and cooked through.
- Repeat and serve: For subsequent batches, melt more butter on the griddle before adding batter. Serve the pancakes warm, topped with additional butter and syrup as desired.
