- 1 ½ cups powdered sugar
- 1 tsp. vanilla extract
- 2 tablespoons strong chilled espresso
- 1 tsp. cocoa powder

Instructions
- Prepare the filling. In a large mixing bowl, gently combine the ricotta cheese, powdered sugar, vanilla extract, chilled espresso, and cocoa powder. Stir carefully to mix all ingredients well without overworking the ricotta to maintain a light, creamy texture.
- Fill the pastry bag. Transfer the prepared ricotta mixture into a pastry bag or a large plastic sandwich bag with one corner snipped off, creating a makeshift piping tool for easy filling.
- Fill the cannoli shells. Arrange the cannoli shells on a tray or cookie sheet. Pipe the ricotta filling starting at the sides of each shell, then fill the cavity in the middle, adding extra filling at the ends for a generous and even distribution.
- Finish and serve. Lightly dust the filled cannoli with additional cocoa powder on top for an elegant presentation, then serve immediately to enjoy the crispness of the shells combined with the creamy tiramisu filling.
