This Ultimate Low Carb Baked Big Mac Rice Paper Rolls recipe offers a creative, healthy twist on the classic Big Mac flavors wrapped in crispy baked rice paper rolls. Featuring seasoned ground beef, American-style cheese, and a tangy low-carb special sauce, these rolls are baked to golden perfection, making a delicious and satisfying low-carb appetizer or meal.

Ingredients

Scale

Special Sauce

  • 1/4 cup low-carb mayonnaise
  • 2 tablespoons sugar-free ketchup or tomato paste with sweetener
  • 2 tablespoons sugar-free dill relish or finely diced dill pickles
  • 1 teaspoon white vinegar
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika

Roll Filling

  • 1 lb ground beef
  • Salt and black pepper, to taste
  • 8 American-style cheese slices, halved
  • 1/4 cup finely diced white onion
  • 1/4 cup finely diced dill pickles
  • Shredded iceberg lettuce, for serving
  • 8 rice paper wrappers
  • Olive oil, for brushing (optional)
  • Sesame seeds, for sprinkling (optional)

Instructions

  1. Prepare Your Ingredients: In a small bowl, combine low-carb mayonnaise, sugar-free ketchup or tomato paste with sweetener, sugar-free dill relish or finely diced pickles, white vinegar, onion powder, garlic powder, and paprika. Stir well to create the special sauce. Finely dice white onion and dill pickles. Shred iceberg lettuce and set all aside.
  2. Cook the Ground Beef: Heat a large skillet over medium-high heat. Add ground beef and break it apart with a spoon. Season generously with salt and black pepper. Cook for 7-8 minutes until fully browned. Drain excess fat and allow beef to cool slightly.
  3. Assemble the Rice Paper Rolls: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Fill a shallow dish with warm water. Dip one rice paper wrapper for 15-20 seconds until pliable. Lay it flat on a damp work surface. Place half a slice of American cheese near the bottom edge, add 2 tablespoons cooked beef, a sprinkle of diced onion and pickles, and drizzle with special sauce. Fold bottom edge up and over filling, then fold left and right sides inward, rolling tightly upwards.
  4. Repeat Assembly: Continue dipping, filling, and rolling remaining wrappers. Place finished rolls on the prepared baking sheet. Optionally, brush tops with olive oil and sprinkle sesame seeds.
  5. Bake Until Crispy: Bake rolls for 15-20 minutes, flipping halfway through, until golden brown and crispy on all sides.
  6. Serve & Enjoy: Remove from oven and slice rolls diagonally if desired. Arrange on a platter and top with fresh shredded iceberg lettuce. Serve immediately with extra special sauce for dipping.

Notes

  • Ensure rice paper wrappers are pliable when rolling to avoid tearing.
  • Drain excess fat from beef thoroughly to prevent soggy rolls.
  • You can customize the special sauce sweetness with your choice of low-carb sweetener.
  • For a spicier version, add a dash of hot sauce to the special sauce.
  • Baking ensures a crisp texture without frying, keeping it low carb and healthier.
