Description

Enjoy a tender and flavorful whole slow-cooked cauliflower infused with aromatic spices and olive oil. This easy, vegetarian recipe uses a slow cooker to gently soften the cauliflower to perfection, making it a comforting and healthy side dish or centerpiece. Optionally broiled for a golden finish, it’s garnished with fresh parsley for a vibrant touch.

Ingredients

Scale

Primary Ingredients

  • 1 head cauliflower (whole, intact)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1/2 tsp paprika (smoked if available)
  • 1/4 cup vegetable broth (or water + a pinch of salt)
  • Chopped parsley (or any green garnish, optional)

Instructions

  1. Prepare the Cauliflower: Remove large outer leaves from the cauliflower. Trim the stem just enough so the head sits flat in the slow cooker, ensuring even cooking.
  2. Season the Cauliflower: In a small bowl, mix together the olive oil, salt, black pepper, garlic powder, and paprika. Rub this spice mixture all over the cauliflower, pressing into all the crevices to fully infuse the flavors.
  3. Setup the Slow Cooker: Pour the vegetable broth into the bottom of the slow cooker to provide moisture during cooking. Gently place the cauliflower head inside, core side down, then cover with the lid.
  4. Cook Slowly: Cook on low heat for 3 to 4 hours, or approximately 2.5 hours if your cauliflower is smaller, until the vegetable is fork-tender and easily pierced.
  5. Optional Broil for Finish: For a roasted, golden crust, transfer the cooked cauliflower to a baking sheet and broil in your oven for 3 to 4 minutes. Watch carefully to prevent burning.
  6. Garnish and Serve: Sprinkle with chopped parsley or your favorite green garnish. Slice into wedges and serve warm as a delicious, hearty side or main dish.

Notes

  • Using smoked paprika adds a deeper smoky flavor but regular paprika works well too.
  • Broiling at the end is optional but recommended for a crispy, roasted texture.
  • If you prefer, substitute vegetable broth with water plus a pinch of salt.
  • Make sure the cauliflower is not too tightly packed in the slow cooker for even cooking.
  • Leftovers can be reheated gently in the oven or microwave.
