Instructions

  1. Preheat the oven and skillet: Set your oven to 425°F (220°C) and place a 10-inch oven-safe skillet inside to heat thoroughly. This ensures the butter will sizzle and create steam when added.
  2. Prepare the batter: In a blender, combine eggs, whole milk, all-purpose flour, granulated sugar, salt, pure vanilla extract, fresh yuzu juice, fresh orange juice, orange zest, and yuzu zest. Blend for 20 to 30 seconds until the mixture is completely smooth and slightly frothy—this aeration helps the Dutch baby to puff beautifully.
  3. Melt the butter in the hot skillet: Carefully remove the preheated skillet from the oven using oven mitts. Add the unsalted butter, swirling the pan continuously until the butter is fully melted and the entire bottom and sides are evenly coated.
