Instructions
- Sauté the onion: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Cook peas: Add the peas and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for about 10 minutes, or until the peas are tender.
- Add mint and cool: Remove the pot from heat and stir in the fresh mint leaves. Let the mixture cool slightly.
- Puree the soup: Using an immersion blender, puree the soup until smooth. Alternatively, transfer the soup in batches to a blender and blend until smooth.
- Add crème fraîche and season: Return the soup to the pot and stir in the crème fraîche. Season with salt and pepper to taste.
- Reheat gently and serve: Reheat gently if necessary, but do not boil. Serve warm, garnished with a dollop of crème fraîche and a sprinkle of lemon zest.
